Ingredients

Fajita Seasoning Mix

  • 1 tablespoon cornstarch
  • 1 teaspoon chili powder
  • 1 teaspoon kosher salt
  • 1 1/2 teaspoons smoked paprika
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 teaspoon ground cumin

Main Ingredients

  • 2 tablespoons olive oil (divided, or avocado oil)
  • 1 large onion, sliced
  • 2-3 garlic cloves, minced
  • 2 medium bell peppers, seeded and sliced
  • 4 large chicken breasts, boneless and skinless
  • 1 cup cheddar cheese, shredded
  • Fresh parsley, to garnish
  • Lime wedges, optional for serving

Instructions

  1. Prepare the Fajita Seasoning Mix: In a small bowl, combine cornstarch, chili powder, kosher salt, smoked paprika, onion powder, garlic powder, cayenne pepper (if using), and ground cumin to create the fajita seasoning blend. Set aside.
  2. Sauté the Veggies: Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add sliced onion and minced garlic; sauté for 2-3 minutes until fragrant. Add sliced bell peppers and sprinkle half of the fajita seasoning mix over them. Cook for an additional 3 minutes, then remove from heat and set aside.
  3. Prepare the Chicken: Carefully cut a lengthwise pocket into each chicken breast to create a space for stuffing. Rub the remaining fajita seasoning all over the outside of the chicken breasts. Stuff each pocket evenly with the sautéed pepper and onion mixture and a portion of shredded cheddar cheese. Secure the opening with a toothpick inserted diagonally to keep the stuffing inside.
  4. Sear the Chicken: Return the same skillet to medium-high heat and add the remaining 1 tablespoon of olive oil. Place the stuffed chicken breasts in the pan and sear each side for 4-5 minutes until golden brown.
  5. Cook the Chicken Through: Pour 1/4 cup water into the skillet, then cover with a tight-fitting lid. Reduce heat to low and let the chicken cook gently for 6-8 minutes, or until the internal temperature reaches 165°F (74°C) and chicken is fully cooked.
  6. Garnish and Serve: Remove the toothpicks carefully. Garnish the stuffed chicken breasts with fresh parsley and serve with lime wedges on the side for an optional tangy zest.
