  • 12 slices thinly sliced beef
  • 1 pack enoki mushrooms, split into 12 pieces
  • ½ small yellow onion, sliced
  • 2 large eggs

Sauce

  • 1 cup dashi broth (homemade or store-bought)
  • 2 tablespoons mirin
  • 3 tablespoons soy sauce
  • ½ tablespoon sugar
  • ¼ teaspoon black pepper

Garnish

  • 1 stalk green onion, diced

Instructions

  1. Prepare the Enoki Beef Rolls: Lay out the 12 slices of thinly sliced beef on a clean surface. Divide the enoki mushrooms into 12 equal bundles and place one bundle on each beef slice. Add some thinly sliced yellow onion on top of the mushrooms, then carefully roll each beef slice tightly around the mushrooms and onion to form individual rolls.
  2. Set up the Pan and Egg Coating: Beat the 2 large eggs in a shallow dish. Heat a non-stick skillet over medium heat and lightly grease if necessary to prevent sticking.
  3. Cook the Beef Rolls: Dip each beef roll into the beaten egg coating, ensuring it is fully covered. Place the coated rolls in the hot skillet. Cook the rolls evenly, turning occasionally to brown all sides and to gently cook the inside mushrooms and beef, about 4–6 minutes total.
  4. Prepare the Sauce: In a small saucepan, combine the dashi broth, mirin, soy sauce, sugar, and black pepper. Heat the mixture over medium heat until it begins to simmer and slightly reduce, stirring to dissolve the sugar completely.
  5. Combine and Serve: Once the beef rolls are cooked through, transfer them to a serving dish. Pour the hot soy-based sauce over the rolls evenly. Garnish with diced green onion and sprinkle with sesame seeds for added flavor and presentation. Serve immediately and enjoy.
