Delicious and easy-to-make vegan truffles featuring a rich blend of raw pecans, walnuts, medjool dates, and dairy-free dark chocolate. These truffles are naturally sweetened, refined sugar-free, and perfect for a healthy, indulgent snack or dessert.

Ingredients

Nuts

  • 1 cup raw pecans
  • 1 cup raw walnuts

Truffle Base

  • 1 Tbsp cacao powder or unsweetened cocoa powder
  • 1/4 tsp sea salt
  • 1/2 tsp ground cinnamon (optional)
  • 10 whole medjool dates (pitted; if dried out, soak in warm water for 10 minutes then drain)

Chocolate Coating

  • 1 1/4 cups dairy-free dark chocolate (real chocolate bar, not chips; roughly chopped)
  • 1 tsp coconut oil
  • ~1/4 cup cacao nibs, crushed pecans/walnuts, and/or sea salt for topping

Instructions

  1. Prepare Nut Meal: Place pecans and walnuts in a food processor or high-speed blender and process until the mixture reaches the consistency of a meal. Remove and set aside in a dish.
  2. Process Dates: Add pitted dates to the food processor and process until small bits remain or the dates form into a ball.
  3. Combine Ingredients: Add cacao powder and half of the nut meal to the dates in the processor. Pulse while gradually incorporating the rest of the nut meal a little at a time until a loose dough forms. You might not use all the nuts; reserve leftovers for topping.
  4. Form Truffles: Scoop out 1 tablespoon portions of the dough and roll gently into balls. If the dough is not forming easily, warm it slightly in your palm, then shape into loose balls. Place formed truffles on parchment paper and freeze to chill. You should have about 14 truffles.
  5. Melt Chocolate: Melt the dairy-free dark chocolate in a double boiler or microwave in 30-second increments, stirring frequently to avoid overheating. Stir in coconut oil to thin the chocolate and ease the dipping process.
  6. Dip Truffles: Remove truffles from the freezer one at a time and dip them into the melted chocolate. Use a fork to lift them out, tapping off excess chocolate. Place back on parchment paper and top with sea salt, crushed nuts, or cacao nibs.
  7. Set and Store: Allow the chocolate to set at room temperature. Store leftovers in an airtight container at room temperature or freeze for longer storage.

Notes

  • Use real dark chocolate bars instead of chips for better melting texture.
  • If dates are too dry, soak them briefly in warm water to soften.
  • The nut meal can be adjusted to your texture preference—finer for smoother truffles or coarser for more crunch.
