This Easy Vegan Garlic Noodles recipe is a quick, flavorful, and comforting plant-based dish perfect for a weeknight meal. Made with simple ingredients like angel hair pasta, fresh garlic, vegan butter, and Bragg's Liquid Aminos, these noodles absorb a garlicky, savory broth for a deliciously rich vegan meal ready in just 10 minutes.

Ingredients

Garlic Butter Sauce

  • 4-6 cloves garlic, minced
  • 3 tablespoons vegan butter (or olive oil), plus 1 tablespoon extra optional
  • 1 tablespoon Bragg's Liquid Aminos
  • 1/2 teaspoon salt
  • 1/2 teaspoon red pepper flakes

Pasta

  • 8 oz (1/2 package) angel hair pasta, broken in half
  • 3 cups water (or broth), divided (2 1/2 cups initially, additional 1/2 cup if needed)

Instructions

  1. Prepare the garlic and butter: Mince 4-6 cloves of fresh garlic into small pieces and add to a shallow pan along with 3 tablespoons of vegan butter.
  2. Sauté the garlic: Warm the butter and garlic over low heat for about 3 minutes until fragrant but not browned. Then add 1 tablespoon Bragg's Liquid Aminos, 1/2 teaspoon salt, and 1/2 teaspoon red pepper flakes. Stir to combine the flavors.
  3. Add pasta and liquid: Break the angel hair pasta in half and place it in the pan. Cover with 2 1/2 cups of water and stir well to ensure noodles are submerged and begin absorbing the liquid.
  4. Simmer until cooked: Increase heat to medium and simmer for about 5 minutes, stirring frequently. The noodles will absorb most of the cooking liquid. Add the remaining 1/2 cup water toward the end if needed to reach your preferred sauce consistency.
  5. Finish and serve: For extra richness, stir in another tablespoon of vegan butter at the end of cooking. Garnish with fresh parsley and vegan parmesan if desired. Serve the noodles hot for best flavor and texture.

Notes

  • You can substitute the water with vegetable broth for a more flavorful noodle base.
  • If you prefer less heat, reduce or omit the red pepper flakes.
  • Refined olive oil may be used instead of vegan butter for a lighter version.
  • The noodles cook quickly, so watch carefully and stir often to prevent sticking.
  • Vegan parmesan and fresh parsley are optional but add great flavor and presentation.
