Instructions

  1. Sauté Vegetables: Heat olive oil in a large soup pot over medium heat. Add chopped carrots, onion, and celery along with salt and pepper. Cook, stirring occasionally, until vegetables are translucent and soft, about 5-10 minutes.
  2. Add Flour: Sprinkle the flour over the cooked veggies and stir to coat evenly. If the mixture looks dry, drizzle in additional olive oil and stir to combine.
  3. Incorporate Stock: Slowly drizzle in approximately 5 cups of turkey or chicken stock while stirring continuously. This will cause the mixture to bubble and thicken, forming the base of the soup.
