Ingredients

Steak and Seasoning

  • 8 ounces skirt steak
  • 1 tablespoon taco seasoning
  • Kosher salt, to taste
  • Fresh cracked pepper, to taste

Vegetables and Cheese

  • 1/2 cup thinly sliced red onion
  • 1/2 cup thinly sliced white onion
  • 1/2 cup sliced bell pepper (assumed as mentioned in instructions)
  • 2 cups shredded cheddar cheese

  • 4 teaspoons olive oil, divided
  • Large flour tortillas (size according to preference)
  • Salsa, for serving

Instructions

  1. Heat oil: Heat 2 teaspoons of olive oil in a large cast iron skillet or sauté pan over medium-high heat to prepare for cooking the steak.
  2. Season steak: Pat the skirt steak dry with paper towels and season all sides evenly with 1 tablespoon of taco seasoning for flavorful crust.
  3. Cook steak: Place the steak in the hot skillet and cook for 4-6 minutes on each side, or until cooked to your preferred level of doneness. Remove steak from pan and let it rest on a cutting board to retain juices.
  4. Sauté vegetables: Without cleaning the pan, add remaining 2 teaspoons of olive oil and reduce heat to medium. Add the thinly sliced red and white onions along with sliced bell pepper, seasoning with salt and pepper. Cook, stirring frequently for about 3 minutes, or until vegetables are tender. Remove vegetables and wipe out pan until mostly clean.
  5. Slice steak: Slice the rested steak against the grain into thin strips for tenderness and ease of eating.
  6. Assemble quesadillas: Place a flour tortilla in your clean pan, then layer shredded cheddar cheese, sliced steak, sautéed vegetables, and another sprinkle of cheese on top. Fold the tortilla over to enclose the fillings.
  7. Cook quesadillas: Cook the assembled quesadilla for 2-3 minutes on each side over medium heat until the cheese melts and the tortilla turns golden brown and crispy.
