These Easy S'mores Cookie Bars combine the classic flavors of chocolate, graham crackers, and marshmallow in a delicious layered cookie bar. Ingredients

Cookie Base

  • 2-3 packages pre-made chocolate chip cookie dough (about 16-24 oz total)

Layers

  • 2 cups milk chocolate chips or dark chocolate chips (or 3 Hershey's chocolate bars, chopped)
  • 1 cup graham cracker crumbs
  • 2 cups marshmallow fluff/creme

Instructions

  1. Prep: Remove the chocolate chip cookie dough from the fridge and let it sit at room temperature for 10-15 minutes to soften. If frozen, thaw first. Line a 9x9 inch square baking pan with parchment paper and preheat the oven to 350°F (175°C).
  2. Press Dough Base: Press half of the cookie dough into an even single layer at the bottom of the prepared pan. Use your fingers to ensure there are no gaps and the dough covers the entire base thoroughly.
  3. Layer Chocolate: Sprinkle the chocolate chips evenly over the cookie dough layer, distributing them so the base is almost covered with chocolate.
  4. Add Graham Crackers: Crumble the graham crackers and sprinkle the crumbs evenly over the chocolate layer.
  5. Spread Marshmallow Fluff: Scoop the marshmallow fluff over the graham cracker layer and spread into an even layer using a spatula. Spray the spatula lightly with nonstick spray to prevent sticking if necessary.
  6. Top with Remaining Dough: Roll or press the remaining cookie dough into thin strips or small pieces and arrange them evenly over the marshmallow layer. It’s okay if some marshmallow shows through, as this allows it to seep through during baking, creating a gooey top.
  7. Bake: Bake in the preheated oven for 25-30 minutes, until the cookie bars are set and the edges are lightly golden brown. Monitor closely in the last 10 minutes to avoid burning, especially the marshmallow layer.
  8. Cool and Serve: Allow the bars to cool completely for at least 2 hours so they set well. Use a sharp knife to cut into 16 squares and serve.
