Instructions

  1. Mix the base: Drain the oil from the sardine can into a medium bowl. Add the lemon zest, lemon juice, and Dijon mustard. Season with sumac, ground coriander, kosher salt, and freshly ground black pepper (about 1/2 teaspoon each). Whisk the mixture well until all the ingredients are combined.
  2. Make the dip: Add the sardines to the bowl and mash them thoroughly with a fork to break them down. Then add the finely chopped shallot, grated carrot, and chopped fresh herbs. Mix everything together until evenly combined.
