Ingredients
Egg Mixture
3 large eggs
Salt and freshly ground black pepper, to taste
Knob of butter
Filling and Garnish
2 slices smoked salmon
1 tbsp crème fraîche
4 chives, finely chopped
Sprigs of fresh parsley
1 lemon, cut into wedges
Instructions
Prepare the eggs: Crack the 3 large eggs into a bowl, season with salt and freshly ground black pepper to taste, then whisk thoroughly until the mixture is smooth and slightly frothy, ensuring a light and fluffy omelette.
Heat the pan and melt butter: Place a non-stick skillet over medium heat and add a knob of butter. Allow the butter to melt completely, coating the base of the pan but not letting it brown.
Cook the eggs: Pour the egg mixture into the heated skillet, swirling gently to evenly cover the surface. Let it cook undisturbed for about 1-2 minutes until the edges begin to set but the center remains slightly runny.
Add the smoked salmon: Lay the 2 slices of smoked salmon over one half of the omelette. Spoon 1 tablespoon of crème fraîche over the salmon, then sprinkle the finely chopped chives evenly on top.
Fold and finish cooking: Using a spatula, carefully fold the omelette in half over the filling. Cook for another 1-2 minutes to allow the eggs to finish setting and the fillings to warm through without overcooking.
Serve and garnish: Gently slide the omelette onto a plate. Garnish with sprigs of fresh parsley, and serve with lemon wedges on the side to add a fresh citrus zest if desired.
Notes
You can replace crème fraîche with sour cream or Greek yogurt if unavailable.
For a creamier texture, add a small amount of milk when whisking the eggs.
Be careful not to overcook the eggs to keep the omelette tender.
Fresh herbs like dill or tarragon also complement smoked salmon well.
