This Easy Roasted Cabbage recipe pairs crispy, caramelized cabbage wedges with a rich and tangy onion Dijon sauce, creating a flavorful and quick side dish that's perfect for any meal.

Ingredients

Cabbage

  • 1/2 medium green cabbage (about pounds)
  • 1 tablespoon olive oil (or garlic infused olive oil)
  • Salt and pepper, to taste

Onion Dijon Sauce

  • 3 tablespoons butter (or margarine to be dairy free)
  • 2 tablespoons minced fresh onion (or shallot or white part of sliced green onion; reserve green part for garnish)
  • 1 tablespoon Dijon mustard (or to taste)
  • 1/2 teaspoon minced garlic (or 1/4 teaspoon dried, granulated garlic)
  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper
  • Optional: chopped chives or parsley for serving

Instructions

  1. Preheat Oven: Heat your oven to 450°F (232°C). Line a baking sheet with parchment paper or a silicone baking mat to prevent sticking and ease cleanup.
  2. Prepare Cabbage Wedges: Cut the cabbage half into four equal wedges. Place them on the prepared baking sheet. Use a pastry brush to coat the cut sides of each wedge evenly with olive oil. Sprinkle salt and pepper generously over the cabbage. Turn the wedges over and repeat the oil and seasoning process on the other sides.
  3. Roast Cabbage: Place the baking sheet in the preheated oven. Roast the cabbage for 10 to 12 minutes. Then, carefully flip each wedge and continue roasting for an additional 8 to 10 minutes until the cabbage is nicely browned and crispy at the edges. The dark brown edges add excellent flavor and texture.
  4. Make Onion Dijon Sauce: While the cabbage roasts, combine butter, minced onion, Dijon mustard, garlic, salt, and pepper in a small saucepan. Cook over medium heat until the butter has fully melted and the ingredients are combined. Keep the sauce warm until ready to serve. Alternatively, heat the sauce ingredients in a microwave-safe container on high for about 1 minute, stirring before serving.
  5. Serve: Place the roasted cabbage wedges on serving plates. Whisk the sauce again to ensure it's smooth and drizzle it generously over the cabbage. Garnish with chopped chives or parsley if desired for a fresh herbal touch.

Notes

  • For a dairy-free version, substitute butter with margarine or a plant-based butter alternative.
  • Dark brown, crispy edges on the cabbage wedges add extra flavor—don’t be afraid to let them brown well.
  • You can use garlic-infused olive oil to add more garlic flavor to the cabbage.
  • Adjust Dijon mustard quantity to taste if you prefer a milder or stronger tang.
  • Leftover roasted cabbage and sauce can be stored separately in airtight containers in the refrigerator for up to 3 days.
