Ingredients

Shrimp and Seasoning

  • 1 pound (454 g) extra-large or jumbo raw shrimp, peeled and deveined
  • 4 cloves garlic, minced
  • 2 teaspoons finely grated fresh ginger
  • 1 teaspoon crushed red pepper flakes
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground pepper

Cooking

  • 2 tablespoons extra virgin olive oil
  • squeeze of fresh lemon juice
  • Optional: chopped parsley for garnish

Instructions

  1. Pat dry shrimp: Using a paper towel, thoroughly pat the shrimp dry to remove excess moisture, which helps achieve a better sear.
  2. Season shrimp: In a large bowl, combine the shrimp with minced garlic, finely grated fresh ginger, crushed red pepper flakes, salt, and freshly ground pepper. Toss well until all shrimp are evenly coated with the seasoning mixture.
  3. Preheat the skillet: Heat a large skillet over medium-high heat for about 2-3 minutes until hot. Add the extra virgin olive oil and swirl to evenly coat the bottom of the pan, preparing it for searing the shrimp.
  4. Pan sear shrimp: Place the seasoned shrimp in a single layer in the skillet. Cook for approximately 2-3 minutes on one side without moving them to develop a nice sear. Flip the shrimp once and cook for an additional 2-3 minutes until the shrimp turn pink and opaque but are still tender.
  5. Finish and serve: Remove the shrimp from the skillet. Squeeze fresh lemon juice over the shrimp for a bright flavor and adjust seasoning with additional salt and pepper if needed. Garnish with chopped parsley if desired and serve immediately while hot.

Notes

  • Be careful not to overcook the shrimp, as they can become rubbery; look for a pinkish color and no translucency.
  • Peeled and deveined shrimp ensure better texture and easier eating.
  • Feel free to adjust the crushed red pepper flakes to control the level of spiciness.
  • This recipe works well with a non-stick or stainless steel skillet.
  • Serve with rice, pasta, or a fresh salad for a complete meal.
