Ingredients

Dry Ingredients

  • 1½ cups cake/pastry flour
  • 1½ teaspoons baking powder
  • ¼ teaspoon salt
  • ¾ cup granulated sugar

Wet Ingredients

  • 2 large eggs (room temperature)
  • 1 large egg yolk (room temperature)
  • 5½ ounces cream (whole, whipping or heavy cream) with at least 30% fat content, room temperature
  • 2½ tablespoons oil or melted butter
  • 1 tablespoon lemon zest
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat Oven and Prepare Pan: Preheat your oven to 350°F (180°C). Grease and flour an 8-inch (20 cm) round cake pan or a 7-inch (18 cm) bundt pan, or alternatively, use a non-stick spray to coat the pan evenly.
  2. Mix Dry Ingredients: In a large bowl, whisk together the cake or pastry flour, baking powder, and salt to ensure they are well combined and aerated.
  3. Add Remaining Ingredients: Add the granulated sugar, eggs, egg yolk, cream, oil or melted butter, lemon zest, and vanilla extract to the dry mixture. Whisk everything together until the batter is smooth, taking care not to over mix to maintain a tender texture.
  4. Pour Batter Into Pan: Pour the prepared batter into the greased and floured cake pan, spreading it evenly to fill the pan.
  5. Bake the Cake: Place the pan in the preheated oven and bake for 25 to 30 minutes. Check doneness by inserting a toothpick or cake tester into the center; it should come out clean or with a few crumbs attached.
  6. Cool the Cake: Allow the cake to sit in the pan for about 15 minutes after baking. Then, carefully remove it from the pan and transfer it to a wire rack to cool completely.
  7. Serve: Before serving, optionally dust the cake with powdered sugar or drizzle with a simple lemon glaze to enhance flavor and presentation. Enjoy your fresh, homemade lemon cake!

Notes

  • Use room temperature eggs and cream for better batter consistency and baking results.
  • Do not over mix the batter to keep the cake light and fluffy.
  • You can substitute the oil with melted unsalted butter for a richer flavor.
  • A simple glaze can be made with powdered sugar and lemon juice to complement the lemon zest in the cake.
  • Make sure to check baking time as ovens vary; start checking at 25 minutes.
  • Store leftover cake in an airtight container at room temperature for up to 3 days.
