Instructions

  1. Preheat Oven: Preheat your oven to 180°C (350°F) and line a muffin tin with paper liners or grease the cups well to prevent sticking.
  2. Mash Bananas: In a large mixing bowl, mash the ripe bananas with a fork or potato masher until mostly smooth with a few small lumps remaining for texture.
  3. Add Wet Ingredients: To the mashed bananas, add granulated sugar, vegetable oil, eggs, vanilla extract, and vinegar. Mix thoroughly until all wet ingredients are well combined.
  4. Combine Dry Ingredients: In a separate bowl, sift together the all-purpose flour, baking powder, baking soda, and salt. This ensures even distribution of the leavening agents.
