Instructions

  2. Add Sun Dried Tomatoes and Seasonings: Stir in the chopped sun dried tomatoes, oregano, red chili flakes, salt, and black pepper. Cook for 1 minute to allow the flavors to meld and the tomatoes to soften slightly.
  3. Simmer the Chickpeas and Greens: Add the drained and rinsed chickpeas, vegetable broth, tomato paste, vegan cream, and sliced baby spinach to the pan. Stir well to combine.
