Ingredients

Spices

Marinade

Chicken & Seasoning

Instructions

  1. Mix the spices: In a small bowl, combine dried oregano, ground coriander, ground cumin, and ground nutmeg. Stir well to create the spice mixture.
  2. Make the marinade: In another bowl or large measuring cup, whisk together lemon juice, extra virgin olive oil, and minced garlic until fully blended.
  3. Season the chicken: Pat chicken thighs dry with paper towels. Season both sides liberally with kosher salt and black pepper, then sprinkle the spice mixture evenly. Place the seasoned chicken in a large bowl, add diced onions, and pour the marinade over. Toss gently to ensure all pieces are well coated.
