Ingredients

Shrimp and Vegetables

Sauce

  • 2 tablespoons peanut oil (can substitute olive oil)
  • 1 ½ cups chicken broth
  • ¼ cup low sodium soy sauce
  • 1/3 cup honey
  • 1/4 cup packed brown sugar
  • 5 cloves garlic (minced)
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon toasted sesame oil (optional)
  • ½ teaspoon ground ginger
  • Pinch red pepper flakes
  • ¼ cup cornstarch
  • ¼ cup cold water

Garnish

  • Green onions (to garnish)

Instructions

  1. Prepare the Shrimp: Thaw the shrimp completely if frozen, then pat dry with paper towels. Remove shells, tails, and veins if not already done to ensure clean, ready-to-cook shrimp.
  2. Mix the Sauce Base: In a bowl, combine chicken broth, low sodium soy sauce, honey, brown sugar, minced garlic, apple cider vinegar, toasted sesame oil (if using), ground ginger, and red pepper flakes. Set this sauce mixture aside, but do not add cornstarch yet.
  3. Cook the Shrimp: Heat peanut or olive oil in a large skillet over medium-high heat. Add the shrimp and cook for about 1 minute plus 20 seconds on each side. Use a timer to avoid overcooking as shrimp cook quickly. Once cooked, tilt the pan and carefully transfer the shrimp onto a clean plate. Note they will continue cooking slightly while resting.
  4. Sauté the Broccoli: In the same skillet, add a splash of oil if needed and sauté the broccoli florets over medium-high heat for about 4 minutes until slightly softened but still crisp. Remove broccoli and set aside.

  6. Thicken the Sauce: In a separate small bowl, mix the cornstarch with ¼ cup cold water until fully combined. Slowly add this slurry to the boiling sauce while stirring continuously to prevent lumps. Continue stirring until the sauce thickens to a glossy consistency.
  7. Heat Broccoli in Sauce: Reduce heat to low and add the sautéed broccoli back into the skillet. Cover the pan partially and let the broccoli warm through in the sauce for 2-3 minutes.
  8. Combine Shrimp and Sauce: Add the cooked shrimp back into the skillet and gently spoon the sauce over them. Allow everything to heat through together for about 1 minute to ensure flavors meld and shrimp are hot.
