Ingredients

Marinade and Steak

  • 1 1/2 pounds sirloin steak, cut into 1-inch cubes
  • 1/4 cup low sodium soy sauce
  • 1/4 cup barbecue sauce
  • 1/4 cup olive oil (divided)
  • 1 tablespoon olive oil (divided)
  • 1/4 cup apple cider vinegar
  • 2 tablespoons Worcestershire sauce
  • 2 teaspoons Dijon mustard
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon Italian seasoning
  • 1/4 teaspoon black pepper

Vegetables and Garnish

  • 1 small green bell pepper, cut into large chunks
  • 1 small red bell pepper, cut into large chunks
  • 1 small yellow bell pepper, cut into large chunks
  • 1 red onion, cut into large chunks
  • 8-10 wooden skewer sticks, soaked in water for at least 30 minutes
  • Chopped parsley for serving (optional)

Instructions

  1. Prepare the Marinade: In a large ziplock bag, combine sirloin steak cubes, soy sauce, barbecue sauce, 1/4 cup olive oil, apple cider vinegar, Worcestershire sauce, Dijon mustard, garlic powder, onion powder, Italian seasoning, and black pepper. Toss well to ensure all steak pieces are coated evenly. Seal the bag and refrigerate for at least 2 hours, preferably overnight for deeper flavor infusion.
  2. Prep the Vegetables: While the steak marinates, cut the green, red, and yellow bell peppers along with the red onion into large chunks. Toss these vegetables with the remaining 1 tablespoon of olive oil to lightly coat and set aside.
  3. Preheat the Grill: When ready to cook, preheat your grill to 425°F (218°C). Spray the grill grates with nonstick cooking spray to prevent sticking and ensure easy turning of the kabobs.
  4. Assemble the Kabobs: Remove steak pieces from the marinade. Thread the steak cubes alternately with the prepared bell pepper chunks and red onion onto the soaked wooden skewers, filling each skewer without overcrowding to allow even cooking.
  5. Grill the Kabobs: Place the kabobs on the preheated grill. Cook for 6-8 minutes total, turning every 2 minutes to achieve an even sear and the desired doneness of the steak. Use a meat thermometer if desired—rare at 125°F, medium rare at 135°F, medium at 145°F for accuracy.
  6. Serve: Remove kabobs from the grill and let them rest briefly. Serve immediately, garnished with chopped parsley if desired. Enjoy these juicy, smoky steak kabobs hot off the grill!

Notes

  • Soaking wooden skewers prevents them from burning on the grill, so ensure to soak them for at least 30 minutes before assembling.
  • Marinating overnight intensifies flavors and tenderizes the steak better.
  • Adjust grilling time depending on the size of steak cubes and preferred doneness level.
  • For a spicy twist, add red pepper flakes to the marinade or serve with a spicy dipping sauce.
  • Vegetables can be swapped with mushrooms, zucchini, or cherry tomatoes if preferred.
