Ingredients

Protein & Vegetables

  • 2 chicken cutlets
  • 1 large sweet potato, peeled and cubed
  • 1 tomato, diced
  • 1 cucumber, diced
  • 1 bell pepper, chopped

Dressing & Seasoning

  • 2 cups tzatziki
  • 1 tsp salt
  • ½ tsp black pepper
  • 3 tbsp olive oil
  • salt and pepper, to taste
  • crumbled feta cheese, for topping

Instructions

  1. Roast the Chicken & Sweet Potato: Preheat your oven to 400°F (200°C). Line a baking tray with parchment paper and place the chicken cutlets and cubed sweet potato on it. Drizzle with olive oil, sprinkle with salt and black pepper, and toss to coat everything evenly. Bake for 30–35 minutes until the chicken is cooked through and the sweet potatoes are tender and golden.
  2. Make the Greek Salad: In a medium bowl, combine the diced tomato, cucumber, and chopped bell pepper. Season with salt and a drizzle of olive oil, then toss in the crumbled feta cheese to evenly distribute the flavors and textures.
  3. Assemble the Bowls: Once the chicken and sweet potatoes are roasted, slice the chicken cutlets. Divide the roasted chicken and sweet potatoes between two bowls. Add the fresh Greek salad and top each bowl with a generous scoop of tzatziki sauce for a creamy finish.
