This EASY Goji Berry Smoothie is a refreshing and nutritious blend packed with antioxidant-rich goji berries, creamy banana, and vibrant strawberries. Perfect for a quick breakfast or energizing snack, it combines wholesome ingredients with the subtle sweetness of almond milk and optional vanilla for a deliciously smooth experience.

Ingredients

Main Ingredients

  • ½ cup dried goji berries (soaked in warm water before blending; approx. 43g)
  • 1 large frozen banana (broken into chunks; approx. 1⅓ cups mashed or 265g)
  • 2 cups frozen strawberries (whole or halved; approx. 284g)
  • 1 tbsp chia seeds (approx. 11g)
  • 2 cups unsweetened almond milk (or oat/soy milk; approx. 480ml or 456g)
  • ¼ tsp vanilla extract (optional)

Instructions

  1. Soak Goji Berries: Place the dried goji berries into a bowl with warm water and let them soak for 5–10 minutes until they become soft and pliable. Drain the water thoroughly before using to avoid excess liquid in the smoothie.
  2. Combine Ingredients: In a blender, add the soaked goji berries along with the frozen banana chunks, frozen strawberries, chia seeds, and unsweetened almond milk. Add the optional vanilla extract for enhanced flavor if desired.
  3. Blend Smooth: Secure the blender lid and blend on high speed until the mixture is smooth, creamy, and well combined with no chunks remaining.
  4. Serve: Pour the smoothie into glasses or jars immediately to enjoy the fresh flavors and optimal texture.
  5. Optional Garnish: For a decorative and nutritious touch, sprinkle some extra goji berries or chia seeds on top before serving.

Notes

  • Soaking the goji berries softens them and improves blending texture.
  • Frozen fruit keeps the smoothie cold and thick without needing ice.
  • You can substitute almond milk with other plant-based milks such as oat or soy milk.
  • Chia seeds not only add nutrition but also help thicken the smoothie slightly.
  • Consume immediately for best taste and texture as chia seeds may gel if left standing.
