Ingredients

For the Potatoes

  • 1 tbsp olive oil
  • 2 tbsp unsalted butter
  • 1 lb Yukon Gold potatoes, diced into ½-inch cubes (or red-skinned or fingerling potatoes)
  • 4 cloves garlic, minced
  • 1 tsp dried rosemary
  • 1 tsp dried oregano
  • ½ tsp kosher salt
  • ½ tsp ground pepper

For the Steak

  • 2 tbsp unsalted butter
  • lbs sirloin steak, cut into 1-inch cubes (or beef tenderloin, NY strip steak, or stir fry meat)
  • Additional salt and pepper, to taste
  • Freshly chopped parsley, optional for garnish

Instructions

  1. Heat the pan: Heat a cast iron skillet over medium-high heat. Add the olive oil and 2 tablespoons of butter. Let the butter melt completely to create a rich cooking base.
  2. Season and add potatoes: Season the diced potatoes with salt, pepper, rosemary, and oregano. Add the potatoes and minced garlic to the hot skillet. Cook undisturbed for approximately 4 minutes to allow a golden crust to form.
  3. Cook potatoes thoroughly: Stir the potatoes and continue cooking for another 3-4 minutes until they are fork-tender. Once cooked, transfer the potatoes to a bowl and set aside.
  4. Increase heat for steak: Return the skillet to the stovetop and increase the heat to high. Add the remaining 2 tablespoons of butter and swirl to melt.
  5. Cook steak bites: Add the cubed steak in a single layer to the hot skillet. Sear for 1 minute without moving for good browning. Flip or stir the steak and cook for an additional 1-2 minutes until reaching desired doneness. Remove from heat.
  6. Toss potatoes and steak together: Add the cooked potatoes back to the skillet with the steak bites. Toss gently to combine and warm through. Season with additional salt and pepper if desired.
