Ingredients

Truffle Base

Instructions

  1. Prepare the Pan: Heat your oven to 350°F (175°C). Grease a 9x13-inch baking pan or line it with parchment paper, leaving extra overhang on the sides for easy removal of the bars once baked.
  2. Melt Butter and Chocolate: In a large saucepan over medium heat, melt the butter. Remove from heat and whisk in the unsweetened chocolate until completely melted and smooth.
  3. Add Sugar and Eggs: Stir in the sugar until well combined. Add the eggs one at a time, mixing thoroughly after each addition.
  4. Incorporate Flavorings and Flour: Stir in the vanilla extract and instant espresso powder if using. Then fold in the whole wheat pastry flour until just combined.

  6. Heat Cream and Honey: While the base cools, combine the whipping cream and honey in a medium saucepan and heat to just barely boiling—small bubbles will start forming on the edges.
  7. Create Ganache: Remove the cream mixture from heat and add the dark chocolate chips. Stir until the chocolate melts completely. Whisk in the butter. Allow the ganache to cool to room temperature and thicken to a custard-like consistency while the base cools.
  8. Whip Ganache: Once thickened, whisk the ganache until it lightens slightly in color and becomes fluffy.
  9. Top the Bars: Spread the whipped ganache evenly over the cooled base layer.
  10. Finish and Set: Dust the top generously with cocoa powder and optionally decorate with chocolate chips or covered coffee beans. Let the bars sit at room temperature for about an hour to firm up.
