Ingredients

Strawberry Puree

  • 12½ ounces strawberries (about 3/4 pound), cleaned and sliced
  • ½ cup granulated sugar

Whipped Cream

  • 1 cup heavy cream (cold, with at least 30% fat content)

Topping

  • Extra fresh strawberries, sliced, for garnish

Instructions

  1. Prepare the Strawberry Puree: Clean and slice the strawberries, then place them into a blender or food processor with the granulated sugar. Puree until smooth. Remove ½ cup of this puree and set aside for layering the dessert later.
  2. Whip the Cream: In a chilled bowl, beat the cold heavy cream until stiff peaks form. Be careful not to overbeat to avoid turning it into butter.
  3. Combine Puree and Cream: Gently fold the remaining strawberry puree into the whipped cream, mixing carefully to preserve the airy texture of the mousse.
  4. Assemble the Mousse: Divide the reserved ½ cup strawberry puree evenly among 4 small or medium glasses (each glass holds about 1 cup of water for size reference). Spoon or pipe the strawberry mousse on top of the puree layer in each glass.
