Ingredients

Strawberry Balsamic Dressing

  • 1 1/4 cup fresh strawberries, hulled and chopped
  • 1/4 cup balsamic vinegar
  • 1/4 cup plain Greek yogurt (or substitute with dairy-free yogurt)
  • 2 tablespoons olive oil
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon Dijon mustard
  • 1 tablespoon lemon juice
  • 1 clove garlic

Instructions

  1. Blend Ingredients: In a blender or food processor, combine the fresh strawberries, balsamic vinegar, Greek yogurt, olive oil, honey or maple syrup, Dijon mustard, lemon juice, garlic, and chopped onion. Blend until the mixture is smooth and creamy.
  2. Adjust Consistency: Taste the dressing and season with salt and pepper as needed. If the dressing is too thick, add water one tablespoon at a time, blending briefly after each addition, until you reach your desired consistency.
  3. Refrigerate to Meld Flavors: Transfer the dressing to a jar or airtight container and refrigerate for at least 30 minutes to allow the flavors to meld. Before serving, shake or stir the dressing well. Store in the refrigerator for up to 5 days.
