This easy creamy chicken noodle soup is a comforting, hearty dish perfect for a cozy meal. It features tender vegetables sautéed to caramelized perfection, rich chicken broth simmered with egg noodles, shredded rotisserie chicken, fresh spinach, and a splash of heavy cream, all topped with freshly grated Parmesan cheese for a deliciously satisfying bowl of warmth.

Ingredients

Vegetables and Herbs

  • 1 tablespoon olive oil
  • 1/2 yellow onion, finely diced (about 1 1/2 cups)
  • 2 large carrots, thinly sliced into rounds
  • 2 stalks celery, very finely chopped
  • 3 garlic cloves, minced
  • 5 sprigs fresh thyme
  • 2-3 cups fresh spinach leaves, torn into small pieces (optional)

Liquids and Broth

  • 6-7 cups chicken broth (preferably Better Than Bouillon base)
  • 1 cup heavy cream

Other Ingredients

  • 1/2 teaspoon salt
  • 2 cups old-fashioned egg noodles
  • 2 cups shredded rotisserie chicken
  • Freshly grated Parmesan cheese for serving

Instructions

  1. Cook Vegetables: Heat the olive oil in a large Dutch oven over medium heat. Add the diced onions, carrots, and celery, cooking for 7-10 minutes until the vegetables are very tender and starting to caramelize, which develops deep, rich flavors.
  2. Add Seasoning and Herbs: Stir in the minced garlic, salt, and fresh thyme sprigs. Sauté for one minute until fragrant, allowing the garlic and herbs to infuse the base of the soup.
  3. Add Broth and Noodles: Pour in the chicken broth and add the egg noodles. Bring the mixture to a low simmer and cook for about 10 minutes until the noodles are tender but not mushy.
  4. Finish Soup: Remove the pot from heat. Carefully pull out and discard the thyme sprigs. Stir in the fresh spinach, shredded rotisserie chicken, and heavy cream. Combine well and let the residual heat wilt the spinach and warm the chicken through. If any oil separates on top, rest the soup for 10-20 minutes or stir before serving to reincorporate.
  5. Serve: Ladle the soup into bowls, garnish with freshly grated Parmesan cheese, and serve with hot crusty bread for a complete comforting meal.

Notes

  • Using a rotisserie chicken saves time and adds great flavor.
  • Better Than Bouillon base provides a richer broth taste over standard store-bought broth.
  • Allowing the soup to rest helps any separated oils blend back for a creamier finish.
  • Fresh spinach is optional but adds a nice pop of color and nutrition.
  • Egg noodles can be substituted with any preferred pasta shape.
  • Leftovers keep well refrigerated for up to 3 days and reheat nicely on the stovetop or microwave.
