Ingredients

Dry Ingredients

  • 60 grams Kelloggs Corn Flakes or other Corn Flakes brand (use fresh, unopened pack for best results)
  • 120 grams rolled oats
  • 120 grams fine desiccated coconut (not shredded)
  • 150 grams caster sugar
  • Pinch of salt (regular table salt, to taste)

Wet Ingredients

  • 125 grams unsalted butter
  • ⅓ cup honey

Instructions

  1. Prepare Dry Mix: In a large mixing bowl, combine the cornflakes, rolled oats, desiccated coconut, caster sugar, and a pinch of salt. Stir gently to evenly distribute all dry ingredients without crushing the cornflakes.
  2. Melt Butter and Honey: In a small saucepan over low heat, melt the unsalted butter together with the honey. Stir continuously until the mixture is fully combined and smooth; do not allow it to boil.
  3. Combine Wet and Dry Ingredients: Pour the warm butter and honey mixture over the dry ingredient mixture. Using a wooden spoon or spatula, mix thoroughly until all dry ingredients are evenly coated and stick together.
  4. Press Into Pan: Line a slice or baking pan with parchment paper. Transfer the mixture into the pan and press down firmly and evenly using the back of a spoon or your hands to create a compact slice.
  5. Chill: Place the pan in the refrigerator and chill for at least 2 hours, or until the slice is set and firm enough to cut.
  6. Cut and Serve: Once firm, remove from refrigerator, lift the slice using the parchment paper, and cut into squares or bars. Serve chilled or at room temperature.
