Noodles
3.5 ounces (100 grams) precooked udon noodles
Sauce and Garnishes
1 green onion, thinly sliced
1 teaspoon sesame seeds
½ shallot, very finely diced
½ garlic clove, very finely diced
⅓ teaspoon freshly grated ginger
1 tablespoon light soy sauce
1 tablespoon dark soy sauce
1 teaspoon sriracha
½ teaspoon honey
1 teaspoon sesame oil
½ teaspoon chili oil (optional)
Instructions
Boil Noodles: Bring a small pot of water to a boil. Add the precooked udon noodles and warm them for 1 minute, or follow the package instructions. Drain the noodles well to remove excess water.
Sauté Shallots: While the noodles are warming, heat the sesame oil in a small skillet over medium-low heat. Add the finely diced shallot and cook, stirring frequently, for about 1 minute until it softens and becomes fragrant.
Add Aromatics and Sauce: Stir in the minced garlic and grated ginger, cooking for about 30 seconds until fragrant. Add light soy sauce, dark soy sauce, sriracha, and honey. Continue stirring and cooking the sauce until it becomes glossy and slightly thickened, approximately 1 minute.
Toss Noodles with Sauce: Add the drained udon noodles to the skillet and toss thoroughly so the noodles are evenly coated with the sauce. Then stir in the sesame seeds and thinly sliced green onion.
Serve: Divide the noodles into serving bowls. Drizzle with chili oil if desired for an extra spicy kick. Serve immediately while hot.

You can adjust the amount of sriracha and chili oil according to your preferred spice level.
Using precooked udon noodles significantly reduces cooking time.
If you don't have both light and dark soy sauce, use just soy sauce but expect a slightly different flavor profile.
