Ingredients

Cake Batter

  • 1 1/2 cups all purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup butter, softened
  • 3/4 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup buttermilk (or regular milk)
  • 1/2 cup sour cream (or yogurt)

Cinnamon-Sugar Layer

  • 1/4 cup brown sugar
  • 1/4 cup flour
  • 3/4 teaspoon cinnamon

Crumb Topping

  • 1/2 cup butter, softened
  • 1 cup all purpose flour
  • 2/3 cup brown sugar
  • 1 1/2 teaspoons cinnamon
  • Pinch of salt

Icing

  • 1 cup icing sugar
  • 1 tablespoon milk

Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 350°F (175°C) and generously grease a 9x9 inch cake pan with butter or line it with parchment paper to prevent sticking.
  2. Mix Dry Ingredients: In a large bowl, combine 1 1/2 cups flour, baking powder, and salt. Set this mixture aside for later use in the cake batter.
  3. Cream Butter and Sugar: Using a stand mixer fitted with a paddle attachment, beat the softened 1/2 cup butter and 3/4 cup sugar together until light and fluffy, which should take a few minutes.
  4. Add Wet Ingredients: Beat in the eggs one at a time, followed by the vanilla extract, milk (or buttermilk), and sour cream (or yogurt) until fully incorporated.
  5. Combine Wet and Dry Ingredients: Gradually add the dry flour mixture to the wet ingredients, mixing until just combined. Scrape down the sides of the bowl to ensure everything is evenly mixed, creating the cake batter.
  6. Prepare Cinnamon-Sugar Layer: In a small bowl, mix together brown sugar, flour, and cinnamon for the cinnamon-sugar layer.
  7. Make Crumb Topping: In another bowl, use a fork to blend the softened butter, flour, brown sugar, cinnamon, and a pinch of salt until pea-sized crumb clumps form.
  8. Assemble Cake Layers: Pour half of the cake batter into the prepared pan. Sprinkle the cinnamon-sugar mixture evenly over this layer. Dollop the remaining cake batter over the cinnamon-sugar layer and gently spread it with the back of a spoon or spatula to cover.
  9. Add Crumb Topping: Using your hands, sprinkle the crumb topping evenly on top, breaking it up into small pea-sized clumps.
  10. Bake the Cake: Bake the cake in the preheated oven for approximately 45 minutes or until a toothpick inserted in the center comes out clean. After baking, let the cake cool completely in the pan.
  11. Prepare and Drizzle Icing: In a small bowl, mix the icing sugar with milk, adding more milk if necessary, to achieve desired drizzling consistency. Drizzle the icing over the cooled cake before serving.

Notes

  • Use buttermilk if possible for a tangier flavor and tender crumb, but regular milk works well too.
  • You can substitute sour cream with plain yogurt if desired.
  • Be careful not to overmix the batter once the dry ingredients are added to keep the cake tender.
  • Ensure the crumb topping is well chilled before sprinkling for best texture.
  • Check the cake starting at 40 minutes, as oven temperatures may vary.
  • Allow the cake to cool completely before icing to prevent the icing from melting.
