Ingredients

Main Ingredients

  • 2 tablespoons butter
  • ½ white onion, diced
  • 2 garlic cloves, chopped
  • 1 bag frozen hash brown potatoes, thawed (approximately 20 ounces)
  • 1 (10 ounce) can cream of mushroom soup
  • 1 cup sour cream
  • ¼ cup Parmesan cheese, grated
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ¼ teaspoon cayenne pepper
  • 1 ¾ cups grated cheese (such as cheddar, Swiss, Gruyère)

Topping

  • ¼ cup grated cheese
  • 4 tablespoons butter
  • 1 cup Panko bread crumbs

To Serve

  • 3 green onions, finely chopped

Instructions

  1. Preheat Oven. Preheat your oven to 350°F (175°C) to ensure it's ready for baking the casserole.
  2. Cook Onion and Garlic. In a small skillet over moderate heat, melt 2 tablespoons of butter. Add diced white onion and chopped garlic cloves. Cook, stirring occasionally, until the onions are soft and fragrant, about 3-5 minutes. Remove from heat and let the mixture cool slightly.
  3. Combine Casserole Ingredients. In a medium-sized bowl, combine the thawed hash brown potatoes, cream of mushroom soup, sour cream, the cooked onion and garlic mixture, salt, black pepper, cayenne pepper, grated Parmesan, and 1 ¾ cups grated cheese. Stir gently until well mixed.
  4. Transfer to Baking Dish. Pour the mixture into a 9 x 13-inch glass casserole or oven-safe baking dish, spreading it evenly into a smooth layer. Sprinkle the top with ¼ cup grated cheese.
  5. Prepare the Topping. In a small bowl, place 1 cup of Panko bread crumbs. Melt 4 tablespoons of butter and drizzle it over the Panko. Toss the mixture to evenly coat the bread crumbs with butter.
  6. Add Topping and Bake. Evenly sprinkle the buttery Panko over the casserole. Place the dish in the preheated oven and bake for 50 minutes, or until the casserole is bubbling and the topping is golden brown and crispy.
  7. Garnish and Serve. Remove the casserole from the oven and sprinkle the finely chopped green onions on top. Serve warm as a comforting side or main dish.

Notes

  • For best results, thaw the hash browns completely before mixing to avoid excess moisture in the casserole.
  • You can customize the cheese blend for different flavors – try sharp cheddar mixed with Gruyère for a rich taste.
  • If you prefer a spicier casserole, increase the cayenne pepper or add a pinch of smoked paprika.
  • Allow the casserole to rest 10 minutes before serving to let it set and cool slightly for easier slicing.
  • This dish can be prepared ahead of time and refrigerated before baking; just add a few extra minutes to the bake time if baking from cold.
