This Easy Breakfast Casserole combines savory sausage, flaky frozen biscuits, and a rich egg custard to create a hearty and satisfying meal perfect for busy mornings or brunch gatherings. With simple ingredients and straightforward preparation, this casserole bakes to golden perfection with a crispy biscuit topping and a creamy, flavorful interior.

Ingredients

Base

  • 25 oz frozen southern style biscuits (Grands)
  • 1-2 tbsp cooking oil (avocado oil, olive oil, or canola oil)

Sausage Mixture

  • 1 1/4 lbs raw breakfast sausage (preferably ground or broken apart patties)
  • 1 yellow onion, diced

Egg Custard

  • 8 large eggs
  • 1 cup whole milk
  • 3/4 cup heavy whipping cream
  • Salt, to taste
  • Fresh cracked black pepper, to taste

Instructions

  1. Prepare the baking dish: Preheat your oven to 350°F (175°C). Lightly grease a 9x13-inch baking dish with your choice of cooking oil to prevent sticking.
  2. Cook the sausage and onions: In a large skillet over medium heat, add the cooking oil and cook the breakfast sausage, breaking it apart with a spoon, until it is fully cooked and browned, about 7-10 minutes. Add the diced yellow onion halfway through and sauté until translucent and fragrant. Remove from heat and drain excess fat if necessary.
  3. Arrange the biscuits: Place the frozen southern style biscuits evenly in the bottom of the prepared baking dish. You can break some biscuits into smaller pieces to evenly fit the dish if needed.
  4. Add the sausage mixture: Spread the cooked sausage and onion mixture evenly over the arranged biscuits in the baking dish.
  5. Prepare the egg custard: In a large mixing bowl, whisk together the eggs, whole milk, heavy whipping cream, salt, and freshly cracked black pepper until fully combined and slightly frothy.
  6. Combine and bake: Pour the egg mixture evenly over the sausage and biscuit layers in the baking dish. Press down gently to help ingredients soak the custard. Place the casserole in the preheated oven and bake for 45-55 minutes, or until the top is golden brown and a knife inserted in the center comes out clean.
  7. Rest and serve: Remove the casserole from the oven and allow it to rest for about 10 minutes before cutting into squares. This will help the casserole set and make serving easier.

Notes

  • You can substitute frozen biscuits with homemade biscuit dough for a fresher taste.
  • Feel free to add shredded cheese on top before baking for extra richness.
  • Make sure to cook the sausage thoroughly to ensure safety and prevent excess grease in the casserole.
  • This casserole can be prepared the night before; just cover and refrigerate, then bake in the morning with an additional 10-15 minutes of cooking time.
  • Use fresh herbs like thyme or parsley to add more flavor if desired.
