Ingredients

Lentils and Salad Base

  • 250g puy lentils (in a packet)
  • 4 small pre-cooked beetroots, vacuum packed
  • 2 handfuls of rocket
  • 2 small spring onions, chopped

Additional Ingredients

  • 100g feta, crumbled (usually half a block)
  • Handful of walnuts, ideally roasted
  • ½ cup sundried tomatoes, chopped with oil reserved

Instructions

  1. Cook the Lentils: Rinse the puy lentils under cold water and cook them in boiling water for about 20-25 minutes until tender but firm. Drain well and allow to cool slightly.
  2. Prepare the Beetroot: If not already pre-sliced, slice the pre-cooked vacuum packed beetroots into bite-sized pieces.
  3. Assemble the Salad Base: In a large mixing bowl, combine the cooked lentils, sliced beetroot, and rocket leaves.
  4. Add Flavor and Crunch: Add the chopped spring onions, crumbled feta, roasted walnuts, and chopped sundried tomatoes along with their reserved oil to the bowl.
  5. Toss the Salad: Gently toss all ingredients together to ensure even distribution of flavors and coating of the dressing from the sundried tomato oil.
  6. Serve: Chill the salad for at least 15 minutes if desired, then serve fresh as a nutritious and colorful salad.
