East Coast Shrimp Rolls are a classic summer favorite, featuring tender shrimp mixed in a tangy, herbaceous mayonnaise dressing, served in warm buttery hot dog buns. This recipe combines fresh seafood flavors with a creamy, zesty sauce and aromatic herbs to create a delicious and light meal perfect for picnics, beach days, or casual dinners.

Ingredients

Shrimp

  • 2 tsp sea salt
  • Juice from half a lemon
  • Large pot of boiling water
  • 2 lbs shrimp, cleaned with tails and veins removed
  • Ice bath (water and ice)

Hot Dog Buns

  • 8 hot dog buns
  • 1 tsp butter per bun

Dressing Mix

  • 1 cup mayonnaise
  • 1 cup diced celery
  • 1/2 cup chopped green onions (bottoms only)
  • 1/3 cup chopped dill
  • 1/4 cup chopped chives
  • 1/4 cup chopped parsley
  • 2 tsp chopped capers
  • 2 Tbsp Dijon mustard
  • 1 Tbsp red wine vinegar
  • Zest of 1 lemon
  • 4 cloves garlic, grated or pressed
  • 1 tsp paprika
  • 1/2 tsp garlic salt
  • 1/4 tsp onion powder
  • 1/2 tsp sea salt
  • Fresh cracked black pepper, to taste

Instructions

  1. Prepare Boiling Water: Fill a large pot with water and bring it to a boil over medium-high heat. Add 2 teaspoons of sea salt and the juice from half a lemon to the water to season it and enhance the shrimp flavor.
  2. Make the Dressing: While waiting for the water to boil, combine 1 cup mayonnaise, diced celery, chopped green onions, dill, chives, parsley, chopped capers, Dijon mustard, red wine vinegar, lemon zest, grated garlic, paprika, garlic salt, onion powder, 1/2 teaspoon sea salt, and freshly cracked black pepper in a medium bowl. Mix thoroughly to create a flavorful dressing base.
  3. Cook the Shrimp: Once the water is boiling, add the cleaned shrimp and cook for 2-3 minutes or until they turn pink and are just cooked through. Immediately transfer the shrimp to an ice bath to stop the cooking process and keep them tender.
  4. Toast the Buns: Butter the inside and top of each hot dog bun with 1 teaspoon butter. Place the buns under a broiler for 1-2 minutes, watching carefully to prevent burning. Toasting adds a warm buttery crunch that complements the shrimp filling.
  5. Combine Shrimp and Dressing: Drain the shrimp from the ice bath and chop them into bite-sized pieces. Gently fold the shrimp into the mayonnaise dressing mixture until evenly coated.
  6. Assemble the Rolls: Spoon the shrimp mixture generously into the toasted hot dog buns. Add an extra squeeze of lemon juice on top, sprinkle with sea salt, freshly cracked black pepper, and additional chopped parsley for garnish and an extra burst of fresh flavor.
