Ingredients

Crust

  • 12 oz. Oreo cookies
  • 5 tablespoons melted butter

Filling

  • 3 (8 oz.) packages full-fat cream cheese, room temperature
  • 8 oz. sour cream, room temperature
  • 1 cup granulated sugar
  • 1 tablespoon vanilla extract
  • 2 eggs, room temperature
  • Pinch kosher salt

Toppings

  • 1/2 cup caramel sauce
  • 1/2 cup chopped pecans
  • 1/3 cup mini chocolate chips

Instructions

  1. Preheat Oven: Preheat your oven to 325°F (163°C) and line a 9x13-inch pan with tin foil for easy removal and cleanup.
  2. Prepare Crust: Place Oreo cookies in a food processor and pulse until they reach a crumbly texture, then add melted butter and pulse again until well combined.
  3. Form Crust Layer: Press the Oreo and butter mixture evenly over the bottom of the prepared pan to form a compact crust layer.
  4. Mix Filling: In a large bowl, use a handheld mixer to blend cream cheese and sour cream until mostly smooth, then add sugar and vanilla extract and mix until combined.
  5. Add Eggs and Salt: Incorporate eggs and a pinch of kosher salt into the mixture, mixing until smooth and creamy.
  6. Assemble Cheesecake: Pour the cream cheese filling evenly over the crust layer, spreading it smoothly.
  7. Bake: Bake for 40-50 minutes until the edges begin to pull away from the pan and the center is set but still slightly jiggly.
  8. Cool: Remove from oven and let cool on the counter for 2 hours to reach room temperature.
  9. Add Toppings: Spread caramel sauce over the top, then sprinkle with chopped pecans and mini chocolate chips evenly.
  10. Chill: Refrigerate the cheesecake bars overnight or at least 8 hours to fully set.
  11. Serve: Slice into bars and enjoy this decadent treat.

Notes

  • Ensure all dairy ingredients are at room temperature for a smooth filling.
  • Use tin foil to easily lift the bars from the pan once chilled.
  • For softer pecans, toast them lightly before adding.
  • Mini chocolate chips add a wonderful texture contrast; feel free to substitute with regular chocolate chips if unavailable.
  • These cheesecake bars are best served chilled but can be stored in the refrigerator up to 4 days.
