Ingredients

Cream Mixture

  • 250 g mascarpone
  • 2 eggs, separated
  • 50 g sugar plus 2 tsp sugar, divided

  • 160 ml water

  • 100 g savoiardi ladyfinger biscuits

Instructions

  1. Prepare Earl Grey Tea Infusion: Heat 160 ml of water to just below boiling and steep 2 teaspoons of loose leaf Earl Grey tea for 5 minutes. Strain the tea leaves to create a fragrant tea infusion and set aside to cool slightly.
  2. Separate Eggs: Carefully separate the egg whites from the yolks into two clean bowls, ensuring no yolk mixes into the whites.
  3. Make Mascarpone Cream: In the bowl with egg yolks, add 50 g of sugar and whisk vigorously until the mixture thickens and becomes pale. Gently fold in the 250 g mascarpone until smooth and creamy.
  4. Whip Egg Whites: Using a clean mixer or whisk, beat the egg whites until soft peaks form. Gradually add 2 teaspoons of sugar and continue whipping until stiff, glossy peaks develop.
  5. Combine Mixtures: Gently fold the whipped egg whites into the mascarpone mixture, being careful to preserve the airiness for a light and fluffy cream.
  6. Dip Ladyfingers: Quickly dip each savoiardi biscuit into the warm Earl Grey tea infusion, ensuring they absorb enough liquid without becoming soggy.
  7. Assemble Tiramisu: Arrange a single layer of dipped ladyfingers in your serving dish. Spread half of the mascarpone cream over the biscuits. Repeat with another layer of dipped ladyfingers and the remaining cream.
  8. Chill: Cover the dessert and refrigerate for at least 4 hours, preferably overnight, to allow flavors to meld and the dessert to set.
