This Earl Grey Panna Cotta is a delicate Italian dessert infused with fragrant Earl Grey tea, offering a smooth and creamy texture complemented by subtle notes of bergamot. Perfect for elegant dinners or a refined treat, this panna cotta combines the richness of cream and milk with the aromatic essence of the tea for a unique and satisfying dessert experience.

Ingredients

Cream Mixture

  • 250 ml cream
  • 60 ml milk
  • 40 g sugar
  • 1 tsp Earl Grey tea loose leaf

Setting Agent

  • 4 g gelatin sheets

Instructions

  1. Prepare Gelatin: Soak the 4 grams of gelatin sheets in cold water for about 5 to 10 minutes until they soften and become pliable.
  2. Heat Cream and Milk: In a saucepan over medium heat, combine 250 ml cream, 60 ml milk, and 40 grams of sugar. Stir occasionally until the sugar is fully dissolved and the mixture is hot but not boiling.
  3. Infuse Earl Grey Tea: Remove the saucepan from heat and add 1 teaspoon of loose leaf Earl Grey tea to the warm cream mixture. Let it steep for about 5 minutes to infuse the aromatic bergamot flavor.
  4. Strain Tea Leaves: Strain the mixture through a fine mesh sieve to remove the tea leaves, pressing gently to extract flavor.
  5. Add Gelatin: Squeeze excess water from the softened gelatin sheets and stir them into the warm cream mixture until completely dissolved.
  6. Pour into Molds: Pour the mixture evenly into individual serving molds or ramekins.
  7. Chill to Set: Refrigerate the panna cotta for at least 4 hours, or until set firmly.
  8. Serve: To serve, you can unmold the panna cotta onto plates or serve directly in the molds, optionally garnished with fresh berries or a sprig of mint.

Notes

  • Be careful not to boil the cream mixture, as overheating can affect the texture and flavor.
  • If you prefer a stronger Earl Grey flavor, increase the steeping time slightly but avoid bitterness by not steeping too long.
  • Gelatin quantity is crucial for perfect set; do not reduce unless adjusting for larger quantities.
  • This dessert should be kept refrigerated and consumed within 2 days for best freshness.
