This DIY Green Goddess Dressing is a vibrant, creamy sauce made with fresh herbs, anchovy, and tangy buttermilk. Perfect as a salad dressing, dip, or sandwich spread, it combines fresh basil, parsley, scallions, garlic, and lemon juice with olive oil mayonnaise for a rich, flavorful finish.

Ingredients

Green Goddess Dressing Ingredients

  • ½ cup olive oil mayonnaise
  • ⅓ cup packed fresh basil
  • ⅓ cup packed fresh parsley
  • ⅓ cup buttermilk
  • 2 scallions, chopped
  • 1 tablespoon fresh lemon juice
  • 1 anchovy fillet or ½ teaspoon anchovy paste
  • 1 small clove garlic
  • ¼ teaspoon kosher salt
  • Black pepper to taste

Instructions

  1. Prepare Herbs and Aromatics: Rinse and tightly pack the fresh basil and parsley. Peel and chop the scallions and garlic clove to ensure smooth blending.
  2. Combine Ingredients: In a blender or food processor, add the olive oil mayonnaise, packed basil, parsley, buttermilk, chopped scallions, fresh lemon juice, anchovy fillet or paste, garlic, kosher salt, and a pinch of black pepper.
  3. Blend Until Smooth: Blend the mixture on high speed until the herbs are finely pureed and the dressing is smooth and creamy. Scrape down the sides as necessary to incorporate all ingredients evenly.
  4. Adjust Seasoning: Taste the dressing and adjust salt and pepper as needed, adding more lemon juice if a tangier flavor is desired.
  5. Chill and Serve: Transfer the dressing to a jar or container, refrigerate for at least 30 minutes to allow flavors to meld before serving. Use as a salad dressing, dip, or spread.

Notes

  • For a thinner dressing, add more buttermilk gradually until desired consistency is achieved.
  • Anchovy can be omitted for a vegetarian version, but it adds a characteristic umami flavor.
  • Store leftovers in an airtight container in the refrigerator for up to one week.
  • This dressing pairs well with green salads, grilled vegetables, and sandwiches.
