Ingredients

Main Ingredients

  • 1 box of noodles of your choice
  • 1 tbsp olive oil
  • 1 lb lean ground sirloin beef
  • 1 (12 oz) package andouille sausage, sliced

Vegetables and Aromatics

  • 3 scallions, thinly sliced, plus extra for garnish
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 celery rib, chopped
  • 3 cloves garlic, minced (or 1 tsp garlic powder)

Seasonings and Liquids

  • 2 tbsp tomato paste
  • 2 tbsp Cajun seasoning
  • 1 small green cabbage, sliced into ¼-inch strips
  • 1 cup chicken broth
  • 3 tbsp cider vinegar
  • ¾ tsp kosher salt

Instructions

  1. Cook the noodles: Bring a large pot of salted water to a boil and cook the noodles according to the package directions until al dente. Drain and set aside.
  2. Brown the sausage: Heat the olive oil in a large Dutch oven or deep skillet over medium-high heat. Add the sliced andouille sausage and cook, stirring occasionally, until browned and slightly crisped, about 5 minutes.
  3. Cook the ground beef: Add the lean ground sirloin to the skillet with the sausage, breaking it up with a spoon. Cook until the beef is browned and cooked through, with no pink remaining.
  4. Sauté the vegetables: Lower the heat to medium. Add the thinly sliced scallions, red and green bell peppers, and chopped celery to the meat mixture. Stir and cook for about 5 minutes until the vegetables start to soften but still retain some bite.
  5. Add seasonings: Stir in the minced garlic, tomato paste, and Cajun seasoning. Cook for about 1 minute, stirring constantly, until the mixture smells fragrant and is well combined.
  6. Incorporate the cabbage and broth: Add the sliced cabbage, stirring thoroughly to coat it in the seasoned meat mixture. Pour in the chicken broth and mix well. Cover the pot and bring the mixture to a gentle simmer.
  7. Simmer the cabbage mixture: Reduce the heat to medium-low and cook covered for 25 to 30 minutes. Stir occasionally to prevent sticking and ensure even cooking, until the cabbage is tender and the flavors meld together.
  8. Finish with vinegar and salt: Remove the lid and stir in the cider vinegar and kosher salt. Taste and adjust seasonings as needed. Garnish with additional sliced scallions.
  9. Serve: Plate the cooked noodles and top generously with the dirty cabbage mixture. Serve hot for a comforting, spicy meal.

Notes

  • You can use any type of noodles you prefer, such as egg noodles, fettuccine, or even rice noodles.
  • To make this dish spicier, increase the Cajun seasoning or add a pinch of cayenne pepper.
  • For a milder version, reduce the amount of Cajun seasoning and use sweet paprika instead.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
  • This dish reheats well in a skillet over medium heat with a splash of water or broth to loosen the sauce.
