This Dill Pickle Hummus is a tangy and creamy spread inspired by Trader Joe’s classic, made in just 5 minutes. Featuring chickpeas blended with dill pickles, pickle brine, tahini, and fresh herbs, it offers a bright, fluffy texture thanks to the addition of an ice cube during blending. Ingredients

Hummus Base

  • 1 15 oz can chickpeas (drained and rinsed)
  • 3 tbsp pickle brine (Grillo’s recommended)
  • 1 tbsp lemon juice
  • 3 tbsp tahini
  • 2 tbsp olive oil
  • 2 garlic cloves (roughly chopped)
  • 1/2 tsp onion powder
  • Salt and pepper to taste

Dill Pickle Ingredients

  • 3/4 cup dill pickles (chopped, recommended Grillo’s)
  • 1 tbsp fresh dill

Garnish and Serving

  • 1-2 tbsp fresh dill (chopped)
  • 1-2 tbsp fresh chives (chopped)
  • 1 tbsp olive oil (for drizzling)
  • 2-3 tbsp chopped pickles (for topping)
  • Pita chips or veggies for dipping

Instructions

  1. Combine Ingredients: In a food processor or high-speed blender, add the drained chickpeas, chopped dill pickles, pickle brine, lemon juice, tahini, olive oil, garlic, onion powder, and 1 tbsp fresh dill. Include an ice cube to help incorporate air for a light, fluffy hummus.
  2. Blend: Blend on high until the mixture is creamy and smooth. Stop occasionally to scrape down the sides. If the hummus is too thick, add a little more pickle brine or cold water until the desired consistency is reached.
  3. Season: Taste the hummus and add salt and pepper as needed. Blend again briefly to ensure even seasoning.
  4. Transfer and Garnish: Spoon the hummus into a serving bowl. Drizzle with olive oil, then sprinkle with chopped pickles, fresh dill, and chopped chives for added flavor and presentation.
  5. Serve: Enjoy immediately with pita chips or fresh vegetables for dipping.
