226 g (8 oz) Baking chocolate (60-70% cocoa)
125 ml (½ cup) Heavy cream (full fat)
20 g Unsalted butter, softened
½ tsp Vanilla extract
1 pinch of sea salt
Instructions
Chop Chocolate: Finely chop the baking chocolate into small, even pieces to ensure it melts smoothly and evenly when combined with the warm cream.
Heat Cream: In a small saucepan, gently heat the heavy cream over medium heat until it just begins to simmer. Do not let it boil to prevent breaking the ganache.
Combine Cream & Chocolate: Pour the hot cream over the chopped chocolate in a heatproof bowl. Let it sit for 2-3 minutes to soften the chocolate, then stir gently until completely smooth and glossy.
Add Butter and Vanilla: Stir in the softened butter and vanilla extract to enrich the ganache’s texture and flavor. Add a pinch of sea salt and mix well to balance the sweetness.
Chill Ganache: Cover the bowl with plastic wrap and refrigerate for at least 2 hours, or until the mixture is firm enough to scoop and shape.
Shape Truffles: Using a melon baller or teaspoon, scoop out small portions of chilled ganache and roll quickly between your palms into smooth balls. Work quickly to avoid melting.
Optional Coating: Roll truffles in cocoa powder, chopped nuts, or melted chocolate if desired, for additional texture and flavor.
Serve and Store: Place the truffles on a parchment-lined tray and refrigerate until firm. Store in an airtight container in the refrigerator for up to 2 weeks.
