Custard Rasgulla is a delightful Indian dessert that combines soft, spongy mini rasgullas soaked in a creamy, vanilla-flavored custard sauce. This recipe features a smooth custard made with milk, custard powder, and sugar, garnished with nuts and optional dried rose petals for a fragrant, elegant touch. Perfect for festive occasions or a special treat, this dessert melds traditional Indian sweets with a creamy custard base.

Ingredients

Custard Base

  • 4 Tablespoons Vanilla Flavored Custard Powder
  • 2 Cups Milk (divided)
  • ⅓ Cup Sugar

Rasgulla and Garnish

  • 35 Mini Rasgullas
  • Nuts as needed (cashews, almonds, pistachios, chopped)
  • Dried Rose Petals (optional)

Instructions

  1. Prepare the Custard Base: In a small bowl, mix the custard powder with half a cup of cold milk until smooth and lump-free to create a slurry.
  2. Heat the Milk: Pour the remaining 1.5 cups of milk into a saucepan and bring it to a gentle boil over medium heat. Add the sugar and stir until fully dissolved.
  3. Cook the Custard: Lower the heat to medium-low and slowly add the custard slurry to the boiling milk while continuously stirring to avoid lumps. Cook for 3-4 minutes until the custard thickens and coats the back of a spoon.
  4. Combine with Rasgullas: Remove the custard from the heat and gently fold in the mini rasgullas, allowing them to soak in the warm custard for 10-15 minutes to absorb flavor.
  5. Chill and Garnish: Transfer the custard rasgulla mixture to a serving dish. Garnish with chopped nuts and optionally sprinkle dried rose petals on top. Chill in the refrigerator for at least 1 hour before serving for best taste.

Notes

  • Use good quality vanilla-flavored custard powder for the best aroma and flavor.
  • The mini rasgullas should be soft and fresh to absorb the custard properly.
  • You can substitute fresh cream for part of the milk for a richer custard.
  • Adjust sugar quantity based on your preferred sweetness level.
  • Chilling enhances the flavors and sets the custard for a smooth texture.
  • Dried rose petals are optional but add a lovely aroma and visual appeal.
