Ingredients

Chicken and Seasonings

  • 1.5 lb chicken breast (about 4 pieces, 6 oz. each) (chicken thighs can be substituted)
  • 1 tsp dried oregano
  • 1 tsp paprika
  • ¼ tsp onion powder
  • ½ tsp pepper
  • ½ tsp salt

Sauce

  • ¼ cup honey
  • ¼ cup Dijon mustard
  • 2-3 garlic cloves, minced
  • 2 Tbsp butter, melted
  • ¼ cup heavy cream

Optional Thickener

  • 2 Tbsp corn starch
  • 4 Tbsp cold water

Instructions

  1. Season the chicken. Pat the chicken breasts dry with a paper towel to remove excess moisture. Sprinkle the salt, pepper, oregano, onion powder, and paprika evenly over the chicken pieces, ensuring they are well coated for maximum flavor.
  2. Prepare the honey mustard sauce. In a bowl, whisk together the honey, Dijon mustard, minced garlic, and melted butter until the mixture is smooth and well blended. Pour this sauce evenly over the seasoned chicken, covering the pieces thoroughly.
  3. Cook in the crockpot. Close the lid and cook on LOW heat for approximately 3 hours, or until the chicken reaches an internal temperature of 165°F. For best results, check at around 2 hours to monitor progress and prevent overcooking.
  4. Shred the chicken and add cream. Once fully cooked, shred or pull the chicken apart into large chunks according to your preference. About 30 minutes before serving, stir in the heavy cream to enrich and mellow the sauce.
  5. Thicken the sauce (optional). To thicken the sauce, mix the cornstarch with cold water until smooth. Stir this slurry into the crockpot and continue cooking on warm or low heat for about 30 minutes, allowing the sauce to thicken gradually. The thickening time may vary depending on your crockpot.
  6. Serve. Once the sauce reaches the desired thickness, serve the creamy honey mustard chicken hot with your choice of sides such as rice, potatoes, or steamed vegetables.

Notes

  • If using chicken thighs instead of breasts, cooking time may slightly vary; check for internal temperature of 165°F.
  • For a dairy-free version, substitute heavy cream with coconut cream or omit it entirely.
  • Make sure to check the chicken periodically to avoid overcooking and drying out the meat.
  • The sauce can be thickened at the end or left thinner, depending on personal preference.
  • This recipe can be doubled for a larger batch; adjust the crockpot size accordingly.
