Ingredients

Chicken and Marinade

  • 3 large boneless, skinless chicken breasts (about 1.5 to 2 pounds)
  • 1 sweet onion, sliced thin into half moon shapes

  • 2 tablespoons extra-virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1½ teaspoons dried oregano
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper

Instructions

  1. Prepare the crockpot and onion layer: Spray the insert of the crockpot with nonstick cooking spray to prevent sticking. Evenly layer the thinly sliced onions on the bottom of the crockpot, creating a flavorful bed for the chicken.
  2. Place and marinate the chicken: Lay the chicken breasts on top of the onion slices. If chicken breasts are large, cut them in half horizontally to make smaller pieces for even cooking. In a small bowl, whisk together lemon juice, olive oil, red wine vinegar, dried oregano, kosher salt, and black pepper. Pour this marinade evenly over the chicken, ensuring each piece is well coated. Use a spatula to scrape out all remaining marinade from the bowl onto the chicken.
  3. Cook the chicken: Cover the crockpot with its lid and cook on LOW for 6 to 7 hours, allowing the chicken to slowly absorb the flavors and become tender.
  4. Shred the chicken: Remove the chicken pieces from the crockpot onto a plate or cutting board. Using two forks, shred the meat into bite-sized pieces. Return the shredded chicken back to the crockpot and stir to mix it well with the cooking juices and onions.
  5. Assemble the gyros: Warm the pita bread in the microwave or oven. Spread a generous amount of tzatziki sauce over the pita, spoon some of the Greek chicken onto the center, then top with shredded lettuce, chopped tomatoes, cucumber, and any additional toppings like kalamata olives or feta cheese. Add more tzatziki if desired and serve immediately.
