A simple and flavorful Crockpot Chicken Breast recipe that uses a blend of aromatic spices and olive oil to create tender, juicy chicken breasts cooked slowly in chicken broth. Perfect for an easy, hands-off dinner with minimal prep.

Ingredients

Chicken and Seasonings

  • 4 boneless, skinless chicken breasts
  • ½ cup low-sodium chicken broth
  • 2 tbsp olive oil
  • 1 tsp kosher salt
  • ½ tsp onion powder
  • ½ tsp dried thyme
  • ½ tsp ground paprika
  • ¼ tsp ground black pepper
  • ¼ tsp garlic powder

Instructions

  1. Prepare the Slow Cooker: Pour the ½ cup of low-sodium chicken broth into the bottom of the slow cooker. This will help keep the chicken moist during the long cooking process.
  2. Mix the Seasoning: In a small dish, combine the kosher salt, onion powder, dried thyme, ground paprika, black pepper, and garlic powder to create the seasoning blend.
  3. Season the Chicken: Rub the 2 tablespoons of olive oil all over the chicken breasts, then evenly coat them with the seasoning mixture to infuse flavor into the meat.
  4. Place Chicken in Slow Cooker: Arrange the seasoned chicken breasts directly into the slow cooker on top of the broth, ensuring they are well spaced for even cooking.
  5. Cook the Chicken: Cover and cook on high for 3 to 4 hours or on low for 4 to 6 hours, until the chicken is thoroughly cooked and tender. Use a meat thermometer to ensure an internal temperature of 165°F (74°C).

Notes

  • Use low-sodium chicken broth to control the salt content in the dish.
  • Adjust spices to your taste preference or substitute with fresh herbs if desired.
  • Check the chicken occasionally after 3 hours if cooking on high, to avoid overcooking and drying out the meat.
  • Leftover cooked chicken can be shredded and used in salads, sandwiches, or wraps.
