Ingredients

Potatoes

  • 5 pounds Yukon gold potatoes, peeled and diced into 1-inch pieces

Dairy & Butter

  • 1/2 cup (1 stick) butter, diced
  • 1/2 cup heavy cream, plus more as needed
  • 4 ounces cream cheese, diced

Liquids & Broth

  • 1 cup chicken broth

Seasonings & Garnish

  • 1 teaspoon Italian seasoning
  • Kosher salt, to taste
  • Fresh cracked pepper, to taste
  • Chives for garnish

Roasted Garlic

  • 1 head garlic
  • 2 teaspoons olive oil

Instructions

  1. Prepare Potatoes: Peel and dice the Yukon gold potatoes into 1-inch pieces. Place them in a large bowl of cold water to prevent browning, then transfer the diced potatoes to a 7-quart crock pot.
  2. Add Liquids and Butter: Pour in the chicken broth and heavy cream, then add a few large pinches of kosher salt. Stir gently to combine. Scatter the diced butter evenly over the top of the potatoes.
  3. Cook Potatoes: Cover the crock pot and cook on high for 3 to 4 hours, until the potatoes are fork-tender and very soft.
  4. Roast Garlic: While the potatoes cook, preheat your oven to 350°F (175°C). Slice the head of garlic in half horizontally, drizzle the cut side with olive oil, then wrap it tightly in aluminum foil.
  5. Bake Garlic: Roast the wrapped garlic in the oven for 1 hour. Once cooled, squeeze the roasted garlic cloves from the skin and mash them with a fork. Set aside.
  6. Mix Ingredients: When the potatoes are done cooking, add the mashed roasted garlic, Italian seasoning, diced cream cheese, and additional salt and fresh cracked pepper to taste.
  7. Mash Potatoes: Using an electric mixer, mash the potatoes and blend all ingredients thoroughly until smooth and creamy. Add more heavy cream as needed to reach desired consistency and adjust seasonings to taste.
