Ingredients

Shrimp Patties

  • 1 pound shrimp, peeled and deveined
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon paprika
  • ½ teaspoon chili powder
  • ¼ teaspoon dry mustard powder
  • 1 large egg white
  • ¼ cup all-purpose flour
  • 1 cup panko breadcrumbs
  • Oil for frying (about 1 cup, or enough to shallow fry)
  • 4 brioche buns, toasted

Tartar Sauce

  • 3 hard-boiled eggs, coarsely chopped
  • ¼ cup mayonnaise
  • 2 tablespoons finely chopped onion
  • 2 tablespoons finely chopped cornichons
  • 2 teaspoons chopped fresh dill
  • ½ teaspoon lemon juice
  • ½ teaspoon hot sauce
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Honey Mustard Aioli

  • ½ cup mayonnaise
  • 2 tablespoons stone ground mustard
  • 1 tablespoon honey
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Cabbage Salad

  • 2 cups shredded green cabbage
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • ¼ teaspoon salt

Instructions

  1. Prepare the shrimp mixture: In a food processor, pulse the shrimp along with garlic powder, salt, black pepper, paprika, chili powder, and dry mustard powder until finely chopped but not pureed. Transfer the mixture to a bowl and mix in the egg white, flour, and panko breadcrumbs until well combined and sticky enough to form patties.
  2. Form the patties: Divide the shrimp mixture into four equal portions and shape each into a round patty, about ¾-inch thick. Place patties on a plate and refrigerate for 15-20 minutes to help them firm up.
  3. Cook the shrimp patties: Heat oil in a large skillet over medium heat. Once hot, carefully add the patties and fry for about 3-4 minutes per side or until golden brown and cooked through. Remove from skillet and drain on paper towels.
  4. Make the tartar sauce: In a bowl, combine the chopped hard-boiled eggs, mayonnaise, finely chopped onion, cornichons, fresh dill, lemon juice, hot sauce, salt, and pepper. Stir well until thoroughly mixed. Refrigerate until serving to allow flavors to meld.
  5. Prepare honey mustard aioli: In a small bowl, whisk together mayonnaise, stone ground mustard, honey, lemon juice, and season with salt and pepper to taste. Adjust flavors as needed.
  6. Make cabbage salad: Toss shredded green cabbage with olive oil, lemon juice, and salt. Mix well and let sit for 5 minutes to soften slightly.
  7. Assemble the burgers: Spread a generous layer of honey mustard aioli on the toasted brioche buns. Place a crispy shrimp patty on the bottom bun, top with some cabbage salad and a spoonful of tartar sauce. Add the top bun and serve immediately.

Notes

  • Use fresh or thawed shrimp for best texture and flavor.
  • Adjust the hot sauce in the tartar sauce according to your spice preference.
  • For a lighter version, consider baking the patties at 400°F for 12-15 minutes instead of frying.
  • To keep patties from falling apart, chilling them before cooking is essential.
  • Serve immediately to enjoy the crispy texture of the shrimp patties.
