Ingredients

Potatoes

  • 2 lb potatoes (about 4 medium 2-2.5" diameter potatoes)

Herb Butter Mixture

  • 3 tbsp unsalted butter
  • 1 tbsp olive oil
  • 1 tbsp minced fresh herbs (rosemary, thyme, parsley, and/or chives)
  • 1 tsp kosher salt
  • 1/2 tsp garlic powder

  • Ground pepper (for garnish)

Instructions

  1. Preheat Oven and Prepare Pan: Heat the oven to 375°F (190°C). Liberally mist a muffin tin with olive oil cooking spray to prevent sticking during baking.
  2. Slice Potatoes Thinly: Using a mandoline slicer or a sharp chef's knife, thinly slice the potatoes into 1/8" thick slices ensuring uniform thickness for even cooking.
  3. Melt Butter and Combine Ingredients: Place the unsalted butter in a large mixing bowl and microwave for 30 seconds until melted. Add olive oil, minced fresh herbs, kosher salt, and garlic powder to the melted butter and whisk until well combined.
  4. Coat Potato Slices: Add the potato slices to the herb butter mixture. Using clean hands, gently toss the potatoes until every slice is thinly and evenly coated. The potatoes will stick slightly to each other, which is desirable for stacking.
  5. Assemble Potato Stacks: Create stacks by layering about 10-12 coated potato slices and place each stack into the prepared muffin tin cups. Continue stacking and filling the tin until all potato slices are used, adding more slices as needed to form sturdy stacks.
  6. Bake Until Crispy: Place the muffin tin in the preheated oven and bake for 50 minutes. The potato stacks should turn golden brown with crispy edges. Check for doneness by inserting the tip of a paring knife into the center of a stack—the knife should slide in easily and come out clean.
