A delicious recipe for Crispy Garlic Herb Roasted Potato Skins, featuring golden, crunchy potato skins seasoned with garlic, rosemary, thyme, paprika, and Parmesan cheese. Perfect as a savory snack, appetizer, or side dish.

Ingredients

Potatoes

  • 4 large russet potatoes

Seasoning

  • 4 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • 1 teaspoon sea salt
  • 1/2 teaspoon black pepper

Toppings (Optional)

  • 1/4 cup grated Parmesan cheese
  • Fresh parsley, chopped for garnish

Instructions

  1. Preheat the Oven: Preheat your oven to 425°F (220°C). This high temperature helps achieve crispy, golden potato skins.
  2. Prepare the Potatoes: Thoroughly wash and dry the russet potatoes. Using a fork, poke several holes in each potato to allow steam to escape during cooking.
  3. Bake the Potatoes: Place the potatoes directly on the oven rack and bake for about 45-60 minutes, or until the potatoes are tender when pierced with a fork.
  4. Cool and Halve: Remove the baked potatoes from the oven and let them cool enough to handle. Slice each potato in half lengthwise.
  5. Scoop Out the Flesh: Carefully scoop out most of the potato flesh, leaving about 1/4 inch thickness of potato attached to the skin to maintain structure. Set the scooped-out flesh aside for another use if desired.
  6. Prepare the Garlic Herb Oil: In a small bowl, mix olive oil, minced garlic, dried rosemary, dried thyme, paprika, sea salt, and black pepper.
  7. Brush the Potato Skins: Brush the garlic herb oil mixture generously on all sides of each potato skin.
  8. Add Parmesan Cheese (Optional): Sprinkle the grated Parmesan cheese evenly over the potato skins for added flavor and crispy texture.
  9. Roast Potato Skins: Place the potato skins on a baking sheet, skin side down, and roast in the oven for 15-20 minutes, until crispy and golden brown.
  10. Garnish and Serve: Remove from the oven, sprinkle with chopped fresh parsley if desired, and serve immediately while hot and crispy.

Notes

  • For extra crispiness, you can broil the potato skins for 1-2 minutes at the end of roasting. Watch carefully to prevent burning.
  • Leftover potato flesh can be used to make mashed potatoes or added to soups.
  • Parmesan cheese is optional but adds a nice salty, crispy crust.
  • Fresh herbs can be used instead of dried if available; use about 1 tablespoon chopped fresh herbs.
  • Russet potatoes are preferred due to their starchy texture, which crisps well.
