Instructions

  1. Prepare the chicken thighs: Pat the chicken thighs dry with a clean paper towel to remove excess moisture. This helps the breading stick better and results in a crispier crust. Set aside.
  2. Setup a dredging station: In a medium bowl, crack and whisk the eggs with a pinch of salt to create an egg wash. In a separate shallow bowl, combine the panko breadcrumbs, grated parmesan cheese, paprika, garlic powder, and Italian seasoning. Drizzle the olive oil over the breadcrumb mixture and mix well using your hands or a fork, gently pressing the oil into the crumbs to evenly coat them.
