Ingredients

  • 1 1/2 cups heavy cream

  • Freshly cracked black pepper, to taste

Instructions

  1. Boil the Pasta: Cook the pasta in a large pot of boiling salted water. Stir occasionally and cook until al dente according to package instructions. Before draining, reserve 1 cup of the pasta cooking water for later use.
  2. Simmer the Sauce: While the pasta cooks, combine the butter, heavy cream, and grated garlic in a large skillet over very low heat. Bring the mixture to a gentle simmer, being careful not to boil. Season with a pinch of salt and several turns of freshly cracked black pepper.
  3. Toss to Coat: Add the cooked pasta and 1/2 cup of the reserved pasta water to the skillet with the sauce. Sprinkle in the grated cheese and drizzle the truffle oil over the top. Toss everything together thoroughly, adding more pasta water as needed to achieve a velvety smooth sauce that evenly coats the pasta. Taste and adjust salt seasoning if needed.
