  • 1 cup white cheddar cheese, shredded
  • ½ cup Parmesan cheese, freshly grated
  • Salt, to taste
  • 1 tsp black pepper
  • 1 tbsp garlic powder
  • 1 tsp red chili flakes
  • ½ tsp smoked paprika
  • 1 tsp Italian seasoning
  • ½ cup reserved pasta water
  • 1 tbsp chopped parsley, for garnish

Instructions

  1. Cook the pasta: Bring a large pot of salted water to a rolling boil. Add the pasta and cook according to package instructions until al dente. Reserve ½ cup of the pasta cooking water, then drain the pasta and set aside.
  2. Sauté garlic: In a large skillet over medium heat, heat the oil and 1 tablespoon of butter. Add the freshly minced garlic and sauté until fragrant, about 30 seconds, being careful not to burn it.
  3. Cook onions: Add the finely diced onion to the skillet. Cook, stirring occasionally, until the onions become soft and translucent, which should take a few minutes.
