  • 5 Schneider sausages, sliced

Instructions

  1. Brown the sausage: Heat a large pan over medium heat and add the cooking oil. Add the sliced Schneider sausages and cook for 5 to 7 minutes until they are nicely browned. Once browned, remove the sausage pieces from the pan and set them aside for later.
  2. Sauté garlic and tomatoes: In the same pan with the remaining oil and sausage drippings, add minced garlic and baby tomatoes. Cook for 5 to 7 minutes until the tomatoes soften and burst open, releasing their juices. If the pan becomes too dark or sticky from the sausage residue, splash in a little water and scrape the bottom to deglaze and lift all the flavorful bits.
  3. Toast the risotto rice: Add the Arborio rice to the pan with the tomatoes and garlic. Stir and cook for about 2 minutes to toast the rice slightly, ensuring it absorbs the flavorful tomato mixture.
  4. Add cream, broth, and sausage: Pour in the heavy cream and broth. Return the sausage to the pan. Cook over medium heat, stirring frequently, for 12 to 14 minutes until the risotto rice is tender and creamy. If the risotto becomes too thick before the rice is fully cooked, add water in ½ cup increments and continue stirring to prevent sticking.
  5. Finish with seasoning and cheese: Once the risotto is tender and creamy, turn off the heat. Stir in garlic powder, smoked paprika, freshly grated Parmesan cheese, and chopped fresh parsley. Mixing in the Parmesan off heat helps to create a smooth, creamy texture.
  6. Season and serve: Taste the risotto and season with additional salt and pepper as needed. Give it one final stir and serve immediately, with extra Parmesan cheese on the side if desired.

  • If you don’t have Arborio rice, using regular rice is possible but the texture will be less creamy; adjust cooking time and liquid accordingly.
